POPPIN’ BOTTLES WITH BURLY BEVERAGES
Imagine having an old-fashioned soda that was not only delicious but was health-minded AND made from locally-sourced produce. Sounds like a dream that will never come true? Not so fast! Gabe Aiello of Burly Beverages is close to making this dream a reality in downtown Sacramento with his concept of “Pop Shop” for the Calling All Dreamers competition.
While you might associate soda fountain shops with the 1950s, Gabe is planning on taking us further back in time to the 1920s and 30s. With art deco, lively soda jerks and old-fashioned fountain treats, Pop Shop will offer a whole new experience for going out in the downtown area.
Customers of Pop Shop will be served a lot more than sodas, popsicles, and Granita Siciliana. Soda Jerks will engage in back-and-forth banter with customers while whipping up treats Benihana-style. “You’re not just getting a more health-minded approach to the soda fountain. You’re getting a whole amusement experience,” says Gabe of the environment at Pop Shop.
The 1920s take on soda fountain shops isn’t the only thing that’s fresh about Pop Shop. Gabe is passionate about applying the farm-to-fork (or in this case, farm-to-cup) idea to his shop. “I think we’re so disconnected from the food we eat that it would be cool to be like ‘Here’s a photo of the farm where the lemons used in this soda is from, it’s 50 miles up the road.’”, says Gabe. His desire is to show people you can enjoy delicious treats without the use of preservatives and artificial ingredients.
Pop Shop will feature “endless flavor combos”, so we asked Gabe what sodas he would recommend to us at DISPLAY: California and here’s what he said (caution: immediate feelings of thirst may occur):
– The “Burnt Sugar Orange Cream Soda”: burnt sugar simple syrup, mixed with orange cream soda simple syrup, filled with seltzer water and topped with coconut milk.
– The “Pineapple Island Remedy”- Pineapple mixed with nutmeg, all spice and clove, giving it a “jerk” flavor, and topped with coconut milk for a Piña Colada effect.
Fans of Burly Beverages can also expect to see new things from the company. Gabe revealed exclusive Burly flavors will be featured on the Pop Shop menu and that a future party might be in the works as the company is close to receiving their final permit.
Looking back on the journey of his business, Gabe would describe it as exciting, frustrating, and anticipatory. “It was exciting at first, then incredibly frustrating during the permit process,” Gabe explains. Now with the possibility of Pop Shop and the next stage in Burly Beverages, he’s ready to embrace the next phase of his business.
As our time with Gabe wrapped up we knew we had to ask the questions on everyone’s mind: will we ever be gifted with more awesomely 80s videos from Burly Beverages? “I might have to regrow my hair, but I would like to!”, Gabe says.
